Korean inspired sponges, adorned with silky Italian and Swiss meringue buttercreams (no icing sugar, beautifully smooth and not sickly sweet!) make up the backbone of our fresh, made from scratch edible creations.
If youβre not familiar with these types of sponges youβll be in for a surprise - they contain no butter and very little fat giving them their signature delicate, light as air texture. The minimal fat content does mean that these can be drier than the traditional British sponges but worry not! We soak our super soft, cloud like sponges with delicious syrups that add not just moisture but an extra burst of flavour too! Because of the lightness of these sponges we recommend whipped cream as the βbaseβ filling rather than buttercream.
Speaking of fillingsβ¦our standard 4 layer custom cakes come with fluffy whipped creams as an included βbaseβ filling as mentioned above; other fillings can be added into this delicious mix such as tangy zesty curds, flavourful compotes and coulis, chocolate ganache so good youβll want to cover yourself in itβ¦all made using the freshest organic, locally sourced fruits, nuts, flours and on and onβ¦
